COLD SPRING PASTA

Serves 2

200 gr of short wholemeal mafalde pasta (ruffled pasta ribbons)
200 gr of fresh peas
100 gr of date tomatoes
2 tbsp of extra virgin olive oil
2 tbspn of soya sauce
salt
pepper

1. Bring two saucepans of salted water to the boil: in one boil the fresh peas for about 10 minutes, and in the other cook the pasta. When the pasta is cooked, drain it and immerse it for a few seconds in cold water in order to ensure that the cooking is interrupted.

2. Put 2 tablespoons of oil into a saucepan and heat. When it is hot add the boiled peas and the date tomatoes cut into slices or segments. Then add 2 tablespoons of soya sauce so that the vegetables become slightly caramelized.

3. Leave the sauce to cool and finally add it to the pasta, seasoning it with extra oil and, it necessary, with salt and pepper.
