1 medium sized red onion
4 large potatoes (about 700 gr)
2 tbsp of white wine
700 ml of water
8 cherry tomatoes
150 gr of mixed durum wheat pasta
Freshly ground black pepper
Extra Virgin Olive Oil
1. Finely chop the onions and put them into a high-sided saucepan. Add 3 tablespoons of extra virgin olive oil and cook until the onion is golden brown. Then add the peeled potatoes, cut into large pieces (the bigger they are, the less chance there is of them flaking during the cooking) and brown everything for a few minutes. Add the cherry tomatoes, cut into quarters, and simmer everything with two tablespoons of white wine until reduced.
2. Turn the heat up to maximum and add the water to the saucepan. When it comes to the boil, add a pinch of cooking salt and cook for about twenty minutes.
3. After 20 minutes, check to see if the potatoes are cooked. They should be lightly cooked on the outside and still raw on the inside. Then add the mixed pasta and cook it, following the instructions on the packet.
4. When it is cooked, add a pinch of pepper and it is ready to be served.
